Mmm almonds!

Oh how I love almonds. There are so many great recipes for burgers made out of chickpeas, lentils, almonds... and the list goes on. Jayanna and Dan first introduced me to one of their favourite healthy restaurants in Victoria, Re-Bar, in the summer. I had their acclaimed Almond Burger and salad (I had to... it was all Dan would talk about for months!) and it was unbelievable.

My brother Dan then tried an almond burger recipe from The Thrive Diet and sent us the recipe! One thing our kitchen is severely lacking in is a food processor (it is on my 'wish list'), which is why I usually can't make these wonderful burger recipes. We really wanted to make these, so we bought some ground almonds and went to town!

2 cloves of garlic

1 cup of almonds

1/2 cup ground flaxseeds

2 tbsp. of balsamic vinegar

2 tbsp. of coconut oil, or EFA Oil Blend (I use Udo's Oil or Coconut)

Sea salt to taste....

Put all ingredients in a food processor (again, we used ground almonds, so we didn't use a food processor) and blend...then form into 2 patties and grill in a pan that is slightly oiled on 3 or 4-setting for a few minutes and then flip...cook until each side is slightly browned (Dan says it didn't take long at all to cook so watch carefully!)...toast 2 buns and your ready to eat! MMM



Mmm they were delicious :) I wanted to buy some Ezekiel buns, but they were out of them... so we opted for some whole wheat buns instead! I put some mustard, a little Organicville ketchup (made with agave nectar), some cucumbers, tomatoes and some delicious hummus.


All in all... a delicious meal
